Chutney Egg Sandwich

Ingredients

  • Eggs
  • Bread slices
  • Butter
  • ½ cup coriander leaves
  • 12-15 mint leaves
  • 3-4 garlic cloves
  • 1/4th inch ginger piece
  • ½ tsp cumin seeds
  • Lemon juice
  • 1 ½ tbsp. of coconut grated
  • 1 green chilli
  • Bell peppers
  • Onions
  • Carrots grated
  • Lettuce (optional)
     

Instructions

  • Boil the eggs and remove the shells. Cut them into halves and keep them aside.
  • Add the coriander, mint, garlic, ginger, lemon juice, cumin seeds, coconut grated and green chillies to the grinder and prepare the chutney. Add salt according to your taste.
  • Apply the butter on one side of the bread slices and roast them until brown.
  • Spread the chutney on each bread slice. Put the sliced eggs on each of bread.
  • Sprinkle the veggies on each slice and cover it with another slice.
  • Press it using a spatula.
  • Serve it with tomato ketchup.
