Clean and wash the chicken and keep it aside. Heat oil in a pan and add cumin seeds. Let it splutter. Add chopped onions and saute till it becomes translucent. Now add chopped tomato and cook for a minute till it becomes tender.
Step 2 Saute and add spices
Then add the ginger and garlic paste and saute. At this point add all the spice powders like turmeric powder, red chilli powder and coriander powder and mix well. Let the masala cook for a min or till oil starts separating.
Step 3 Add chicken and cook for a while
Now add Kasoori methi and stir. After that add garam masala and mix well. Now add cleaned chicken pieces into the pan so that the masala coats it well. Then add salt. Add little water if required and cover with the lid. Cook on a medium flame till the chicken gets tender.
Step 4 Add butter and serve hot
Now add butter and mix well. Turn off the flame and serve chicken lababdar with naan or chapati.
Tips
Chicken lababdar tastes wonderful with the rich garnishing of chopped coriander leaves, sliced tomatoes and shredded ginger.
If you prefer a thicker and creamier gravy, add 1/2 cup fresh cream to it.
