Cooking Time : 45 Minute
1.
Wash and soak almonds in hot water for 10 minutes. Peel off the skin and take half the almonds and curd and make a fine paste. Keep it aside.
2.
In a pan add ghee and whole spices, once they start to splutter, add mutton and fry until the mutton has changed color.
3.
Now add ginger garlic paste and cook until the raw smell is gone.
4.
Once the ginger-garlic paste and mutton has mixed well, add coriander, cumin, red chili and turmeric powder, salt and mix well.
5.
After around 2 mins add the curd and almonds paste and cook until the masala starts leaving oil.
6.
Next add the crushed fried onions and mix well for some time. Once the masala looks cooked, add around 2cups water and leave it to simmer for almost 30 minutes in medium fame with the lid on.
7.
Check once if the mutton pieces are soft. Now add the remaining almonds and cook for 2 more minutes. End with adding either kewra or rose water and let it sit with the lid on for 2 minutes.
8.
Garnish with coriander leaves and serve hot.
