Mushroom Fried Rice

Cooking Time : 30 Minute

Ingredients  

  • 1 ½ cups Cooked rice, use ⅔ cups of raw rice and cook, will give you 1 ½ cup of cooked rice,
  • 1 tablespoon Oil
  • 1 teaspoon Ginger finely chopped or minced
  • 1 ½ teaspoon Garlic finely chopped or minced
  • 1 large Green chili finely chopped
  • 1 tablespoon Celery finely chopped
  • ¼ cup Spring onion (green onion or scallion) , White part only chopped
  • ½ cup Red pepper sliced into strips (you can use green bell pepper too)
  • ¾ cup Mushrooms sliced
  • 2 teaspoons Soy sauce
  • 1 teaspoon Chilli sauce
  • ½ teaspoon white distilled vinegar
  • Salt to taste
  • ¼ teaspoon Black pepper powder
  • ¼ teaspoon Red chilli flakes
  • 1-2 tablespoons Spring onion (green onion or scallion) , green part finely chopped

Instructions 

  • Heat the oil in a pan on medium-high heat.

  • Once hot add ginger, garlic, green chili, and celery. Mix and saute for a few seconds. Do not burn the garlic.

  • Now add spring onion white. Mix and cook for a minute.

  • Now add capsicum and mushroom.

  • Mix and cook till mushrooms are soft and tender. It took me 3-4 minutes on high flame.

  • Now lower the heat. Add soy sauce, red chili sauce, and vinegar.

  • Stir to combine.

  • Now crank the heat to medium-high again and add rice, salt, pepper, red chili flakes, and spring onion greens.

  • Toss well to combine properly.

  • Stir fry the rice for 2 minutes on high. Then turn off the stove.
