Step 1
Firstly, rinse the chicken under cold running water and then pat dry. Cut the chicken into small chunks. Take a large mixing bowl and mix all the ingredients together except chicken and butter. Make a paste of cashews and nuts by blending in a blender with a little water. Keep it aside in a small bowl. Now, marinate the chicken with yogurt, cashew nut paste, salt,cream and spices. Check the marinade for seasoning and adjust salt, if desired.
Step 2
In the mixing bowl, mix the chicken well with the marinade so that the chicken pieces are properly coated with it. Now, cover the bowl with a lid or clean kitchen cloth and set aside to marinate in refrigerator for at least 4-5 hours .
Step 3
Now, take out the chicken from the refrigerator. Preheat the oven at 350 degree Fahrenheit for about 5 minutes and put the wooden skewers in warm water. Brush some oil and grill the chicken pieces for about 25-30 minutes, until cooked. Once the chicken becomes succulent and tender, remove it from the skewers. Garnish with kewra essence. Serve hot with green chutney.
